Coconut-Mint Lassi
A lassi is a lassi is a lassi -- until you add coconut and mint to it.
Then, you have a Coconut-Mint Lassi.
In the Punjab, a lassi is an all-day drink relished in tall tumblers throughout the day.
~ Ingredients
2 tbsp fresh coconut milk (or powder substitute)
2 tbsp chopped mint
2 cups fresh yoghurt
A pinch of black salt, to taste
~ Method
Blend the yoghurt with the black salt.
Add coconut milk (or the powder after mixing it in a little water).
Mix in chopped mint.
Serve chilled.
