Scandinavia-based Bengali hotelier, Bicky Chakraborty, is slated to foray into restaurant business in Kolkata with a multicuisine restaurant named Cinnamon.
"Kolkata is the city where I hail from and hence my the first of the restaurants is dedicated to this city," said Chakraborty.
It took him some a bit of time to scout around for the ideal property as he wanted to locate Cinnamon in the heart of the city.
The unit is finally coming up at a property at the Park Centre, at the crossing of Park Street and CamStreet.
"This gives us a locational edge," said Chakraborty.
The restaurant will be housed in the first floor of the building and aimed to be one of the biggest in the city, if not the biggest.
Chakraborty admitted that there were shops on the ground floor of the premises but claimed this would not pose too much of a problem as the focus will be on a special entry point from Camac Street which will be done up accordingly.
"We have plans to redecorate the small shops on the ground floor with the approval from the owners and hopefully it will add to the ambience of the place," he said.
Cinnamon will serve high-end multicuisine and for the first time in the city, will include an array of Scandinavian delicacies especially from Sweden, where Chakraborty is currently based.
Cinnamon will offer high-end cuisine on Park Street, otherwise populated by coffee shops, old-time restaurants and Chinese eateries besides The Park and the multi-facility complex Sourav's.
Chakraborty owns the Elite chain of hotels all over Sweden which has 17 hotels housed in restored buildings and has also participated set up the Westbank Hospital in the city.
The chefs and the other hotel staff will be sent to Sweden for training specially for the preparation of Scandinavian dishes.
"We will introduce Scandinavian dishes for the Kolkata palate and depending on the demand and popularity, will introduce more such dishes," said the hotelier. Chakraborty will invest Rs 3 crore (Rs 30 million) for the makeover of this facility.
Chakraborty is also one of the bidders for the Great Eastern Hotel property being privatised by the government of West Bengal.
He said he hoped his expertise in renovating rundown heritage properties and turning them into profit making hotels after careful restoration would be recognised in the bidding process.
