Besides being filling and healthy alternative they're really quick to execute, so avoid slaving away in front of a stove in the heat and try these recipes.
Prawn and Dill Salad
Toss cooked prawns (12 king size), sliced celery (2 sticks), spinach (2 cups), tomatoes (1/2 cup), peeled and sliced avocado (1/2), steamed snow peas (1 cup) and sliced onion (1/2 cup) and drizzle with dressing of low fat ceasar salad dressing.
Add lemon wedges when you serve.

Poached Chicken with Pineapple Salsa
Sprinkle cinnamon and cumin on sliced poached chicken and toss in Pineapple Salsa. Dress the salad with olive oil (4 tbsp) + sugar (1 tbsp) + lemon juice (3 tbsp) + soy sauce (1 tbsp) + salt as per taste.
Let it settle for 20 minutes for flavours to blend before serving.

Ham and Cheese Salad
Toss diced cooked ham (2 cups), cubed or grated cheese (1 cup) in any creamy dressing (3 tbsp) of your choice. Add salt and pepper to taste and serve on a bed of torn romaine lettuce (1.5 cups)
You can also mix in pasta to boost fiber intake.

Tuna Salad in Red Vine Vinegar
Dressing: whisk (1/3 cup) olive oil, (1/3 cup red) wine vinegar, (1 tablespoon) mustard sauce and season with salt and pepper.
Toss boiled cubed potatoes (4), steamed green beans (1 cup), drained tuna (canned, 3cm pieces), cubed tomatoes (2), black olives (1/2 cup), torn lettuce leaves (2 cups), and lastly add the dressing.
You can use fresh tuna steaks instead of canned tuna.

Potatoes and Bacon Salad
Mix diced boiled potatoes (4 - cooled), diced boiled egg whites (2 - cooled), crips and cooked bacon strips (8-10), chopped onion (1), chopped celery (1) and mayonnaise (4 tbsp), salt and pepper.
Serve chilled.
