Chicken Katsu Sando
The Japanese style fried chicken burger is the perfect answer to your mid-week cravings.

Ingredients
For curry mayo
- 3 tbsp mayonnaise
- 2 tbsp curry powder
- 50 ml ketchup
- 1 tbsp soy sauce
- 1 tsp worcestershire sauce
- 1 tsp mustard powder
- 1 tbsp runny honey
For chicken katsu
- 1 egg
- 100 gm plain flour
- 50 gm breadcrumbs
- 1 chicken breast
- Oil for frying
- 2 burger buns of your choice
- 2-3 lettuce leaves
- ¼ cup jalapenos
For zingy slaw
- ½ carrot grated
- ¼ cabbage grated
- ¼ radish grated
- ½ lime juice
Method
For curry mayo
- Combine all ingredients in a bowl and stir until smooth and set aside.
For zingy slaw
- Combine all ingredients in a bowl, add some salt, stir well and set aside.
For chicken katsu
- Rub the chicken with salt and pepper, cover with cling film and marinate in the refrigerator for 2 hours minimum
- Crack an egg into 1 bowl and in another bowl mix flour and breadcrumbs
- Remove the chicken from the refrigerator and dip into the egg mix followed by panko mix and set aside in a plate
- Heat oil in a deep frying pan on high flame, add the chicken breast and fry for 10 mins until cooked.
- Toast the breads, spread some curry mayo on the base of the burger bun, add jalapenos, and lettuce.
- Layer it with the chicken breast, zingy slaw and close it with some curry mayo on the other half of the bun.
