Ramzan recipes: Mutton patties, chicken shawarma and more

Mutton Patties

Mutton Patties

Ingredients

For the filling

  • 1/2 kg mutton minced
  • 1/4 cup coriander leaves chopped
  • 1/4 cup mint leaves chopped
  • 1 tbsp red chilli powder
  • 6 to 7 green chillies chopped
  • 1 tsp garam masala powder
  • 1 tbsp ginger garlic paste
  • 1 tsp turmeric powder
  • 1 tsp roasted cumin powder

For the covering

  • 1 kg boiled potatoes, mashed
  • 1/2 tbsp roasted cumin powder
  • 1/2 tbsp chilli powder
  • Salt to taste

For frying

  • 3 eggs
  • 2 cups bread crumbs
  • Oil for frying

Method

  • Wash and drain mutton very well.
  • In a mixing bowl, add mutton, salt, chilli powder, garam masala powder, turmeric powder and ginger-garlic paste. Mix well.
  • Cook the above in a pressure cooker for two whistles.
  • If necessary, add 1/2 cup water before closing the lid.
  • After a few minutes, open the lid and check. The mutton should be dry; if not, cook till the entire water dries up.
  • Remove keep aside to cool.
  • Add coriander, mint and chopped chillies and serve.

For covering

  • Mash the potatoes well.
  • Add salt, chilli powder and cumin powder and mix well.

For patties

  • Take some oil on your palm.
  • Take a lemon size ball of potato and flatten it on your palm.
  • Place some mutton filling in the centre.
  • Fold all sides towards the inside and using both hands, make a ball.
  • Repeat till the potato mixture and filling is over.

For frying

  • Heat oil in a pan for frying.
  • Spread the bread crumbs on a plate and whisk the eggs in a bowl
  • Take each bowl of patties and roll it in the bread crumbs and dip it in the oil and fry
  • Serve with chutney or sauce.

Chicken Shawarma

Ingredients

  • 1 packet pita bread (ready available)
  • 1/2 kg chicken breast
  • 2 tbsp thick yogurt
  • 1 1/2 tbsp ginger garlic paste
  • 1 tbsp lemon juice
  • 2 tsp chilli powder
  • 2 tsp pepper powder
  • 2 tbsp butter
  • Some French fries
  • 1/2 cup mayonnaise
  • 1/4 cup garlic sauce
  • Salt to taste

Method

  • Wash and drain the chicken very well
  • Add salt, yogurt, ginger garlic paste, lemon juice, chilli powder, pepper powder and mix well.
  • Marinate for around two hours.
  • Heat butter in a pan and fry the chicken till it turns golden.
  • Once done, shred the chicken and keep it aside.
  • Take the pita bread, spread some garlic sauce and mayonnaise.
  • Spread chicken over it and add French fries.
  • Roll and wrap the pita bread.
  • Chicken Shawarma is ready.

Galouti Kebabs

Ingredients

  • 1/2 kg chicken kheema
  • 2 tbsp roasted masala (whole red chilli, saunf, coriander seeds and zeera )
  • 1 tbsp garam masala powder
  • 1/2 cup roasted besan
  • 1 tbsp ginger garlic paste
  • 1/2 tbsp chilli paste
  • 1 tbsp butter
  • 1 onion chopped
  • Oil for frying
  • Salt to taste

Method

  • Wash and drain chicken kheema very well.
  • In a mixing bowl, add kheema, salt, ginger garlic paste, chilli paste, roasted masala, garam masala powder and mix well.
  • Add chopped onions and butter.
  • Add roasted besan and mix well.
  • Cover and marinate for 4 to 5 hours, preferably in the refrigerator.
  • Heat oil in a pan for frying.
  • Meanwhile, make small tikkis from the kheema mix.
  • When the oil is hot, deep fry them in batches till they turn golden.
  • Serve hot with chutney of your choice.

Tip: If you love mutton, you can use mutton kheema in place of chicken kheema. Add 2 tbsp papaya paste to the mixture.

Spinach Chicken

Ingredients

  • 1 kg chicken breast pieces
  • 1 tbsp ginger garlic paste
  • 2 tbsp tomato sauce
  • 1 tbsp red chilli sauce
  • 1 tsp black pepper powder
  • 1 tbsp vinegar
  • 1 cup spinach cut fine
  • 1/2 cup bread crumbs
  • 1 tbsp sesame seeds
  • Salt to taste
  • Oil for frying
  • Red colour (optional)
  • 1 tsp sugar
  • 2 eggs

Method

  • Wash chicken pieces properly and drain well.
  • In a bowl, take chicken, add salt, ginger garlic paste, tomato sauce, chilli sauce, black pepper powder, vinegar and little colour.
  • Mix well and marinate for 4 to 5 hours.
  • After marination, heat a pan, add the chicken pieces and cook till the water dries up. No need to add oil.
  • Cover the pan and cook on slow flame for around 20 minutes.
  • Allow it to cool.
  • In a mixing bowl, add bread crumbs, sesame seeds and spinach. Mix well.
  • Beat eggs and dip each piece of chicken in the egg, then roll on the bread crumbs mixture and fry in hot oil till they become crispy.
  • Sprinkle some sugar before serving.

Chicken Cheesy Roll

Ingredients

  • 1/4 chicken boiled and shredded
  • 1 packet of bread
  • 200 gm grated cheese (Mozzarella)
  • 1 tsp ginger garlic paste
  • 1 tsp chilli powder
  • 1 tsp garam masala powder
  • 2 tsp pepper powder
  • 3 to 4 green chillies chopped
  • Few coriander leaves chopped
  • Oil for frying
  • Salt to taste

Method

For filling

  • Heat one tbsp oil in a pan.
  • Add ginger garlic paste and saute for one minute
  • Add boiled and shredded chicken.
  • Add chopped chillies, chilli powder, garam masala powder and mix well.
  • Remove from fire and add grated cheese. Mix well.
  • Add chopped coriander leaves and keep it aside to cool.

For covering

  • Flatten the bread slices with a rolling pin and cut out the edges.
  • Take water in a bowl and dip the bread slices in it.
  • Squeeze all the water and add the filling in the centre.
  • Press hard to seal it so a roll is formed.
  • Keep it aside for a few minutes to dry.
  • Heat oil in a pan for frying.
  • When the rolls become dry, fry it in batches till they turn golden.
  • Serve hot.
