Today, Reshma brings you this super-easy recipe for Cheesy Corn Pattice.
Ingredients:
- 1 cup sweet corn kernels, boiled
- 4 medium-sized potatoes, boiled and peeled
- 1/2 cup coriander and mint leaves, chopped
- 1 cup capsicum, finely chopped.
- 3-4 green chillies, finely chopped
- 3-4 cheese cubes, grated
- 3-4 tbsp corn flour
- 3-4 tbsp maida
- 1 tsp chilli powder
- 1 tsp cumin powder
- 1 tsp black pepper powder
- 1 cup bread crumbs
- Oil for deep frying
- Salt to taste
Method:
- Mash potatoes and mix in corn kernels, chopped coriander, mint leaves, capsicum, grated cheese, green chopped chillies, chilli powder, cumin powder, pepper powder, 2 tbsp maida, 2 tbsp corn flour and salt to the bowl.
- Make small balls out of this mixture.
- Make a paste of the remaining maida and corn flour separately in a bowl. It should not be too thick or too runny.
- Spread breadcrumbs in a plate.
- Dip each ball of the mixture in the paste, roll it in breadcrumbs and fry till golden brown.
- Serve with coconut chutney and some red chilli garlic chutney.
