Here Rediff reader Ramanunni Nair tells us how to make Tiranga Rice.

Ingredients

  • 3 cups basmati rice
  • 3 tbsp ghee
  • 1 tbsp carrot juice
  • 1 tbsp kesari colour
  • 50 gm coriander finely chopped
  • 50 gm spinach boiled
  • Salt as required

Method

  • Steam cook rice with salt.
  • Make three portions of the rice and keep aside.

For green rice

  • Blend spinach and coriander to make a fine paste.
  • In a kadhai, heat 1 tbsp ghee.
  • Add the ground paste and saute for a minute. Add salt.
  • Mix in the rice and switch off the flame.

For orange rice

  • In a small bowl, mix carrot juice and kesari colour with 1 tbsp of hot water.
  • In a kadhai, heat 1 tbsp ghee.
  • Mix in the rice and keep aside. Add salt if necessary.

For white rice

  • In a kadhai, heat 1 tbsp ghee.
  • Mix in the rice amd keep aside.

For plating

    • Take a white plate.
    • Grease an even edged cup with ghee or oil.
    • Scoop the orange rice in the cup and press it well.
    • Place it upside down on the top end of the plate. Tap slowly to make the perfect shape.
    • Repeat with white and green rice to look like the colours of tiranga.
    • Alternately, you can also simply place the coloured rice one by one, evenly on the plate.
