3 apple dessert recipes without eggs

And when there's apples and jaggery in it, you just can't give it a miss!

Apple Oatmeal Bread

Apple Oatmeal Bread

Ingredients

  • 1 cup whole wheat flour
  • 1 apple (grated)
  • 1/4 cup raisins
  • 3 tbsp honey
  • 1 1/4 tsp baking soda
  • 7 tbsp water
  • 3/4 tsp cinnamon powder
  • 1 cup oats
  • 1 cup buttermilk
  • 1/4 cup walnuts
  • 11/4 tsp baking powder
  • 2 tbsp flaxseeds
  • 1/2 tsp salt

Method

  • Soak the flaxseeds in water and set aside.
  • After some time, place it in the grinder and make a smooth paste.
  • Take whole wheat flour, oats, salt, cinnamon powder, baking soda and baking powder in a large bowl.
  • Add grated apples to the bowl and gently mix with a spoon.
  • Pour honey and buttermilk. Stir gently.
  • Add the flaxseed paste, raisins and walnuts. Mix well.
  • Pour this batter into a well greased cake tin.
  • Preheat the oven at 180 degrees.
  • Place the cake tin in it for 35 minutes or until a skewer inserted in the centre of the bread comes out clean.
  • Serve.

Apple and Cheddar Cheese Scones

Apple and Cheddar Cheese Scones

Ingredients

  • 1 and 3/4 cup of refined wheat flour
  • 1 and 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 cup buttermilk
  • 1 cup apples (cored and diced)
  • 2 tbsp sugar
  • 40 gm table spread (cold)
  • 1 cup cheddar cheese (shredded)
  • 1/2 tsp salt

 Method 

  • In a large bowl, take refined wheat flour, sugar, baking powder, baking soda and salt.
  • Cut the table spread into small pieces and add it to the flour mixture. Mix well till the mixture resembles coarse breadcrumbs.
  • Pour in the buttermilk and gently mix.
  • Add the cheddar cheese and apples. Mix gently until well blended.
  • Place this soft dough on a well floured surface and knead well.
  • Divide the dough into eight equal portions. Shape each one into a 2-inch round disc and place apart on a well geared baking tray.
  • Preheat the oven at 220 degree.
  • Place the baking tray in it for around 15 minutes or until golden brown in colour.
  • Serve.

Apple Upside Down Cake

Apple Upside Down Cake

Ingredients

  • 1 cup of whole wheat flour
  • 1/2 tsp baking powder
  • 1 tsp lemon juice
  • 1/4 cup of table spread
  • 3/4 tsp cinnamon powder
  • 1/2 cup of refined wheat flour
  • 1/3 tsp baking soda
  • 1 cup or water
  • 3/4 cup of jaggery (powdered)
  • 1 tsp vanilla essence
  • 2 apples (cored and diced)
  • A pinch of salt

Method

  • Take the refined wheat flour, whole wheat flour, baking powder, salt, baking soda and cinnamon powder in a large bowl.
  • Add jaggery and table spread. Mix well.
  • Pour water and mix it again with a whisk.
  • Add lemon juice, vanilla essence and apple. Mix it well.
  • Pour this batter into a well greased cake tin.
  • Preheat the oven at 180 degree.
  • Bake for 40 to 45 minutes or until a skewer inserted in the centre of the bread comes out clean.
  • Serve it warm with tea or coffee.
