Kadboli

Ingredients
Salt as per taste
1 tbsp red chilly powder
2 tbsp sesame or til seeds
1/4 cup heated oil
Oil for deep frying
Bhajani flour

Bhajani flour ingredients
Roast each seperately:
1/2 cup bajra
1 cup rice
1 cup jowar
1/2 cup black gram or urad dal
2 tbsp coriander or dhania seed
2 tbsp cumin or jeera seeds

Method
Mix together all the roasted ingredients. Grind into fine flour. Add salt, chilly powder, sesame seeds and heated oil. Knead into smooth dough by adding lukewarm water. Cover with soft cloth, and keep aside for an hour. Make small balls. Roll the balls into thin pencil-thin tubes. Fold the ends of each roll in the centre to make a coil. An easier alternative is to use sorya or press machine. Simply put the balls inside the machine and press into the desired shape. Heat the oil for frying. Deep fry on medium heat till golden brown. Drain and let it cool. It is important that you store this in a air-tight container as it easily looses its crunchiness.
