Winter Recipe: How to make Lauki Soup

This hearty soup is perfect for a chilly winter night. 

Lauki Soup

Ingredients

• 1.5 pieces of lauki
• 3 cups of water
• 2 tsp butter
• 1/2 tsp ginger and chilli paste
• 1 cup milk
• Salt to taste
• 1 tsp black pepper
• Coriander leaves for garnishing

Method

• Boil lauki in the cooker for 5 whistles.
  Blend it into a paste and strain.
• Heat 2 tsp butter in a pan.
  Add 1/2 tsp ginger and chilli paste.
  Add 1 tsp beans, carrot and baby corn.
  Cook till it gets soft.
• Add lauki paste in the pan.
  Add salt to taste and 1 tsp black pepper powder.
  Add 1 cup milk and cook till the soup boils.
  Garnish with coriander leaves and serve.
