Giving a twist to the traditional meat pie, Sarada Krishnan from Chennai shares her special chicken pie recipe.
Ingredients:
For the pastry
- 2 cup maida
- 1/2 cup cubes of butter (chilled)
- 1/4 tsp salt
- 1 tsp sugar
- 1/2 tsp baking powder
- Chilled water
- 1 egg
For the filling
- 1 big onion, chopped
- 1 medium potato, chopped into small pieces
- 1 medium carrot
- 1 cup minced chicken
For seasoning
- Pepper to taste
- Salt to taste
- 1 tbsp maida
- 1 tsp oregano
Method
For the pastry
- Put maida in a bowl. Add salt, sugar and baking powder. Mix well.
- Add butter and mix with your hands till you get a crumbly texture.
- Add egg to chilled water. Mix well and then add to the dough. Don't knead or over-mix.
- Once the dough is ready, cling wrap it and keep in the fridge for half an hour.
For the filling
- Place a vessel on the stove. Pour oil and when the oil is hot, add chopped onions and fry till translucent.
- Add chopped carrots and potatoes and fry for 2-3 minutes.
- Add minced meat and fry for 5-6 minutes. Season with salt, pepper, oregano and maida. Mix well.
- Add half cup water and on medium to high flame cook for some more time.
- When the filling is ready, let it cool to room temperature.
For the assembly
- Make small balls of the dough and roll it out into small circles.
- Place the filling in the centre and seal the pies. Apply water on the edges before sealing it. You can also create a design on the edges using a fork.
- Gently using a brush, apply egg on the pies, and bake at 180°C for 30 minutes.
