So you want to eat healthy, but would rather watch Netflix than cook? We hear you.
Chef Ranveer Brar's quick, flavourful Broccoli Salad is lovely on a cold winter evening.

Broccoli Salad
Serves: 2
Ingredients
For the salad
- 2 cups broccoli florets
- ½ cup chopped apple, preferably firm tart ones
- ½ tsp sea salt
- ½ cup almonds, lightly roasted, chopped
- ¼ cup dried cranberries or raisins
- 1 tbsp fresh dill
- ½ an iceberg lettuce, torn into bite-sized pieces
For the dressing
- ¼ cup or less strawberry syrup
- 1 tbsp or less lemon juice
- 1 tsp orange zest or grated orange peel
- 1 tsp or less chilly flakes
- Pinch salt
- ½ tsp crushed black peppercorns
- 5 tbsp or less extra virgin olive oil
Method
- In a bowl, add the strawberry syrup, lemon juice, orange zest, salt, chilly flakes black pepper, olive oil.
Mix well.
Keep aside.
- Blanch the broccoli florets for 15 seconds by adding to boling water and draining quickly.
Soak for a minute or so in ice water, drain and pat dry with a kitchen towel.
- In another bowl, lightly toss together the broccoli, almonds, apples, lettuce, sea salt, cranberries/raisins, dill.
- Before serving add the dressing to the salad and lightly toss once more.
