Executive Sous Chef Ishika Konar of the Atmantan Wellness Centre shares healthy recipes for the festive season.
Fig Halwa
Ingredients
- 1 cup dried figs, soaked overnight
- 2 tbsp cow's ghee
- 10 almonds, soaked and peeled
- 1 tsp cardamom powder
- 1 tsp chopped pistachios
Method
- Drain the figs. Blend along with soaked almonds.
- Heat ghee in a saucepan and add the puree.
- Cook till all the moisture has dried. Add cardamom powder. Garnish with chopped pistachios and serve hot.
Brown Rice and Prunes Phirni
Ingredients
- 15 gm of Himalayan millet
- 10 gm jaggery
- 500 ml coconut milk
- 1 tsp ghee
- 1 tsp cardamom powder
Method
- In a thick bottomed pan heat ghee and sauté the millet for 4-5 minutes. Add coconut milk and jaggery
- Cook on a slow flame while stirring to avoid curdling of coconut milk.
- Once the millet is well cooked and the pudding is thick, turn off the flame off and add cardamom powder.
- Serve hot, garnished with pistachio powder.
Almond, Dates and Coconut Laddoo
Ingredients
- Almonds, soaked and skinned
- Dates, soaked
- Freshly grated coconut
- Dried desiccated coconut
- Ghee
Method
- In a pan add ghee. Heat a bit and add the puree of dates and almonds.
- Add freshly grated coconut and cook for 10 minutes.
- Turn the flame off and let the ingredients cool down.
- Make small laddoos and coat them with dried coconut.
- Serve with jaggery syrup.
