Here is Hansveen Sabharwal's recipe for Crunchy Poha:
Ingredients:
- Chopped onions
- Mustard seeds (rai)
- Beaten rice (poha)
- Peanuts
- Red pepper powder
- Turmeric powder (haldi)
- Salt to taste
- Oil
- Coriander to garnish
Method of preparation:
- Heat one big tablespoon of oil in a cooking pan.
- Shallow-fry the peanuts in the pan, removing them once they turn goldern-brown.
- In the same pan, place the rai and chopped onions, stirring them till the onions go soft -- don't wait for them to fry till they are golden-brown.
- Add the turmeric powder, red pepper and salt to the pan.
- Place the poha in a bowl and pour water over it. Then put it in the pan, stirring it around to mix with the other ingredients and allowing it to cook till yellow in colour.
- Before serving the crunchy poha, mix in the peanuts and garnish with coriander leaves.
